  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolks and pulse until the dough comes together.
  4. Press the dough into a tart pan and refrigerate for 30 minutes.
  5. In a bowl, toss the persimmon slices with lemon juice, cornstarch, cinnamon, and brown sugar.
  6. Arrange the persimmon slices on top of the tart dough.
  7. Bake for 40 minutes, or until the crust is golden and the persimmons are tender.
  8. Remove from the oven and let cool.
  9. Serve the tart with a dollop of whipped cream.
