  2. In a large bowl, combine the grated carrots, gluten-free flour blend, ground almonds, baking powder, ground cinnamon, ground nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, coconut sugar, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing well until combined.
  5. Fold in the chopped walnuts and raisins.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a small bowl, beat together the cream cheese, powdered sugar, and lemon juice until smooth and creamy.
