Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a large bowl, whisk together the flours, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, beat the eggs. Add honey, olive oil, and Greek yogurt. Mix well.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Fold in the grated carrots, zucchini, apple, walnuts, and raisins.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
