Hull and slice the strawberries.

In a saucepan, combine the sliced strawberries and sugar. Cook over medium heat until the strawberries release their juices and the sugar dissolves.

In a separate bowl, sprinkle gelatin over water and let it bloom for 5 minutes.

Heat the gelatin mixture in the microwave for 20 seconds or until the gelatin is fully dissolved.

In a large mixing bowl, beat the heavy cream, vanilla extract, and lemon juice until stiff peaks form.

Gently fold the gelatin mixture into the whipped cream.

Fold in the cooked strawberry mixture.
