  1. Preheat the oven to 375°F (190°C).
  2. Slice the yellow onion, red onion, and leek.
  3. Heat olive oil in a large skillet over medium heat. Add the sliced onions, leek, garlic, thyme, salt, and black pepper. Cook until the onions are caramelized, about 15 minutes.
  4. In a separate bowl, whisk together the eggs and milk.
  5. Grease a casserole dish and layer half of the caramelized onions. Sprinkle half of the cheddar cheese on top.
  6. Pour the egg mixture over the onions and cheese.
  7. Layer the remaining caramelized onions on top and sprinkle with the remaining cheddar cheese.
  8. Top with bread crumbs.
  9. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
  10. Let it rest for 10 minutes before serving.
