The Tarte Tatin is named after the Tatin sisters who accidentally created the dish when trying to salvage a burned apple tart.

  1. Preheat the oven to 200°C (400°F).
  2. Peel and slice the sweet potatoes into rounds.
  3. Melt the butter in a skillet over medium heat.
  4. Add the sugar, cinnamon, vanilla extract, and salt to the skillet and stir until the sugar has dissolved.
  5. Arrange the sweet potato slices in a single layer in the skillet.
  6. Cook for 5 minutes, then remove from heat.
  7. Roll out the puff pastry and place it on top of the sweet potatoes, tucking in the edges.
  8. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.
  9. Remove from the oven and let it rest for 10 minutes.
  10. Place a serving plate on top of the skillet and carefully flip it over to release the tarte tatin.
  11. Serve warm and enjoy!
