The Tarte Tatin is named after the Tatin sisters who accidentally created the dish when trying to salvage a burned apple tart.

Preheat the oven to 200°C (400°F).

Peel and slice the sweet potatoes into rounds.

Melt the butter in a skillet over medium heat.

Add the sugar, cinnamon, vanilla extract, and salt to the skillet and stir until the sugar has dissolved.

Arrange the sweet potato slices in a single layer in the skillet.

Cook for 5 minutes, then remove from heat.

Roll out the puff pastry and place it on top of the sweet potatoes, tucking in the edges.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.

Remove from the oven and let it rest for 10 minutes.

Place a serving plate on top of the skillet and carefully flip it over to release the tarte tatin.
