  1. In a food processor, pulse the gingersnap cookies until finely ground.
  2. In a mixing bowl, combine the ground cookies, cream cheese, powdered sugar, ginger, cinnamon, and nutmeg. Mix until well combined.
  3. Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the refrigerator and let the truffles chill for at least 1 hour.
  5. In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between, until smooth.
  6. Dip each truffle into the melted white chocolate, allowing any excess to drip off, and place them back on the baking sheet.
  7. Sprinkle the truffles with your choice of sprinkles.
  8. Place the truffles back in the refrigerator for another 30 minutes to set.
  9. Serve and enjoy!
