Preheat the oven to 350°F (175°C).

Peel and dice the potatoes.

Cut the bread into cubes.

Chop the onion and celery.

Melt the butter in a large skillet over medium heat.

Add the onion and celery and cook until softened.

In a large bowl, combine the potatoes, bread cubes, cooked onion and celery, vegetable broth, salt, black pepper, and fresh parsley.

Mix well to combine.

Transfer the mixture to a greased baking dish.

Cover with foil and bake for 20 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.

Let it rest for 10 minutes before serving.
