Shortbread is a traditional Scottish biscuit that dates back to medieval times. It was originally made with leftover bread dough and evolved into the buttery, crumbly treat we know today.

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the flour, sugar, and salt.

Cut the cold butter into small cubes and add it to the bowl. Use your hands or a pastry cutter to mix until the mixture resembles coarse crumbs.

Stir in the chopped mixed nuts and vanilla extract until well combined.

Press the mixture into a greased 9-inch square baking pan.

Bake for 25 minutes or until golden brown.

Remove from the oven and let it cool in the pan for 30 minutes.
