Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy using an electric mixer.

Add the egg to the butter mixture and mix well. Then add the coconut milk and vanilla extract, mixing until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.

Divide the batter evenly among the cupcake liners, filling each about 3/4 full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

In a small bowl, beat together the softened butter, powdered sugar, key lime juice, and lime zest until smooth and creamy.

Once the cupcakes are completely cooled, spread the key lime icing generously on top of each cupcake.
