Preheat the oven to 325°F (163°C).

In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of each cavity of a 12-cup mini cheesecake pan.

In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition. Stir in the chocolate chips.

Pour the cream cheese mixture over the crusts in the mini cheesecake pan. Top each cheesecake with mini marshmallows.

Bake for 18-20 minutes or until the cheesecakes are set. Remove from the oven and let cool in the pan for 5 minutes.

Remove the cheesecakes from the pan and let cool completely on a wire rack. Refrigerate for at least 2 hours.

Before serving, drizzle each cheesecake with hot fudge sauce.
