  2. Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
  3. Place the truffles in the freezer for 2 hours to firm up.
  4. In the meantime, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  5. Dip each truffle into the melted chocolate, using a fork to coat it completely.
  6. Place the coated truffles back on the baking sheet and sprinkle with sprinkles.
  7. Return the truffles to the freezer for another 2 hours to set.
  8. Serve the chocolate cake ice cream truffles chilled and enjoy!
