  1. In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Gradually add ice water and pulse until dough comes together. Shape dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  3. In a bowl, toss together blueberries, cornstarch, lemon juice, and vanilla extract.
  4. On a lightly floured surface, roll out the dough into a 12-inch (30 cm) circle. Transfer the dough to the prepared baking sheet.
  5. Spoon the blueberry mixture onto the center of the dough, leaving a 2-inch (5 cm) border. Fold the edges of the dough over the filling, pleating as necessary.
