In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Gradually add ice water and pulse until dough comes together. Shape dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a bowl, toss together blueberries, cornstarch, lemon juice, and vanilla extract.

On a lightly floured surface, roll out the dough into a 12-inch (30 cm) circle. Transfer the dough to the prepared baking sheet.

Spoon the blueberry mixture onto the center of the dough, leaving a 2-inch (5 cm) border. Fold the edges of the dough over the filling, pleating as necessary.

Brush the edges of the dough with beaten egg and sprinkle with turbinado sugar.

Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
