Preheat the oven to 350°F (175°C). Grease a mini muffin pan.

In a bowl, mash the ripe bananas until smooth.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix well.

Gradually add the mashed bananas to the butter mixture, mixing well after each addition.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in the semi-sweet chocolate chunks.

Spoon the batter into the greased mini muffin pan, filling each cup about 3/4 full.

Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
