Preheat the oven to 375°F (190°C).

Peel and slice the potatoes and sweet potatoes into thin rounds.

In a small bowl, mix together olive oil, garlic powder, dried thyme, salt, and black pepper.

Grease a baking dish and layer the potato and sweet potato rounds, alternating between the two.

Drizzle the olive oil mixture over the layers.

Sprinkle grated Parmesan cheese on top.

Cover the dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.

Remove from the oven and let it rest for 10 minutes.
