Cook the macaroni according to package instructions. Drain and set aside.

In a large mixing bowl, combine the cooked macaroni, cheddar cheese, coconut milk, pineapple chunks, diced red bell pepper, sliced green onions, jerk seasoning, salt, and black pepper. Mix well.
