  1. Preheat the oven to 375°F (190°C).
  2. Cut the mirlitons in half lengthwise and remove the seeds.
  3. Place the mirlitons in a large pot of boiling water and cook for 20 minutes, or until tender.
  4. While the mirlitons are cooking, heat olive oil in a skillet over medium heat.
  5. Add the onion, bell pepper, celery, and garlic to the skillet and sauté until softened.
  6. Remove the mirlitons from the pot and let them cool slightly.
  7. Scoop out the flesh of the mirlitons, leaving a thin shell.
  8. In a bowl, combine the mirliton flesh, sautéed vegetables, breadcrumbs, Parmesan cheese, beaten egg, salt, black pepper, and parsley.
  9. Mix well until all the ingredients are evenly combined.
  10. Stuff the mirliton shells with the mixture and place them in a greased casserole dish.
  11. Bake for 20 minutes, or until the top is golden brown.
  12. Let the casserole rest for 10 minutes before serving.
