  2. Slice the potatoes into thin rounds.
  3. In a saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
  4. Stir in the thyme, salt, and black pepper. Cook for another minute.
  5. Add the milk and bring to a simmer.
  6. Remove from heat and stir in the cheese until melted.
  7. In a greased baking dish, layer half of the potato slices. Pour half of the cheese mixture over the potatoes.
  8. Repeat with the remaining potatoes and cheese mixture.
  9. Cover the dish with foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
  11. Let the dish rest for 10 minutes before serving.
