Vegetable Latkes

Grate the potatoes, onion, carrot, and zucchini.

Squeeze out excess moisture from the grated vegetables.

In a large bowl, combine the grated vegetables, egg, flour, salt, and pepper.

Heat vegetable oil in a frying pan over medium heat.

Take a spoonful of the vegetable mixture and flatten it into a pancake shape in the pan.

Fry the latkes for about 3-4 minutes on each side until golden brown.

Remove from the pan and place on a paper towel to drain excess oil.

Serve hot with sour cream or applesauce.
