Preheat the oven to 350°F (180°C). In a large bowl, cream together the Biscoff spread, unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips. Drop rounded tablespoonfuls of dough onto greased baking sheets. Bake for 10-12 minutes until lightly golden around the edges. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely. Enjoy!
