Inside-Out Stuffed Green Bell Peppers

Preheat the oven to 375°F (190°C).

Cut the tops off the green bell peppers and remove the seeds and membranes.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the quinoa, black beans, corn kernels, tomato, cumin, chili powder, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.

Fill each bell pepper with the quinoa mixture and place them in a baking dish.

Sprinkle cheddar cheese on top of each stuffed pepper.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Let the stuffed peppers rest for 10 minutes before serving.

Garnish with fresh cilantro and serve.
