Preheat the oven to 350°F (180°C).

In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.

Add the egg and vanilla extract, and mix well.

Gradually add the all-purpose flour and mix until a dough forms.

Roll out the dough on a lightly floured surface to about 1/8 inch thickness.

Cut the dough into small rectangles and transfer to a baking sheet lined with parchment paper.

Bake for 8-10 minutes, or until the edges are golden brown.

Allow the wafers to cool completely.

Spread raspberry jam on half of the wafers.

Top with a dollop of whipped cream and sandwich with the remaining wafers.

Let the wafers rest in the refrigerator for 30 minutes before serving.
