  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the milk. Fold in the sliced strawberries.
  5. Divide the batter evenly between the prepared pans. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  7. In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  8. Place one cake layer on a serving plate and spread a layer of whipped cream on top. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.
  9. Garnish with fresh mint leaves and refrigerate for at least 2 hours before serving.
