  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pie crust and line a deep dish pie pan with it.
  3. In a saucepan, combine the sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  4. Remove the saucepan from the heat and gradually whisk in the lemon juice and lemon zest.
  5. In a separate bowl, beat the egg yolks. Gradually whisk in a small amount of the hot lemon mixture, then pour the egg yolk mixture back into the saucepan. Cook over low heat, stirring constantly, for 2 minutes.
  6. Pour the lemon filling into the pie crust.
  7. In a mixing bowl, beat the egg whites, cream of tartar, and vanilla extract until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
  8. Spread the meringue topping over the lemon filling, making sure to seal the edges.
  9. Bake for 12-15 minutes, or until the meringue is golden brown.
  10. Remove from the oven and let cool for at least 2 hours before serving.
