  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Grate the zucchini and squeeze out any excess moisture.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, beat the eggs. Add the honey, vegetable oil, and vanilla extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the grated zucchini and walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. Slice and serve.
