Poinsettia cookies are named after the poinsettia plant, which is often associated with Christmas due to its vibrant red and green colors.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the flour and mix until well combined.

Divide the dough in half. Add red food coloring to one half and mix until the desired color is achieved.

Shape each portion of dough into a log and wrap in plastic wrap. Chill in the refrigerator for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Slice the dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet.

Sprinkle the green sugar crystals on top of the red dough to resemble poinsettia flowers.

Bake for 8-10 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
