Gluten-Free Anzac Biscuit
Anzac biscuits were originally made by Aussie and Kiwi women during WWI to send to soldiers serving overseas.
This is vegetarian and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a large bowl, mix together oats, coconut, flour, and brown sugar.

In a small saucepan, melt butter and golden syrup over low heat.

In a separate small bowl, dissolve baking soda in boiling water, then add to the butter mixture. Stir well.

Pour the liquid mixture into the dry ingredients and mix until well combined.

Take spoonfuls of the mixture and roll into balls. Place them onto the prepared baking sheet.

Flatten each ball slightly with the back of a spoon.

Bake for 12-15 minutes or until golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
