Preheat the oven to 425°F (220°C).

In a large bowl, combine the pancake mix, instant coffee, cocoa powder, and sugar.

Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to mix the butter into the dry ingredients until it resembles coarse crumbs.

In a separate bowl, whisk together the milk, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the chocolate chips.

Turn the dough out onto a floured surface and gently knead it a few times until it comes together.

Shape the dough into a circle or rectangle, about 1 inch (5 cm) thick.

Cut the dough into 8 wedges or squares.

Place the scones on a baking sheet lined with parchment paper.

Bake for 15-18 minutes, or until the scones are golden brown.
