Chocolate mousse is believed to have originated in France in the late 18th century.

Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool.

Separate the egg yolks from the whites. In a mixing bowl, beat the egg yolks with sugar until pale and creamy.

Add the melted chocolate and vanilla extract to the egg yolk mixture. Mix well.

In a separate bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.

In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.

Spoon the mousse into serving glasses or bowls. Chill in the refrigerator for at least 2 hours.

Before serving, dust the mousse with cocoa powder for garnish.
