Basic Potato Leek Soup
Potato leek soup is a classic French dish known as ‘Vichyssoise’. It is traditionally served cold, but can also be enjoyed hot.

Peel and chop the potatoes into small cubes.

Slice the leeks, onion, and garlic.

In a large pot, melt the butter and sauté the leeks, onion, and garlic until softened.

Add the potatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.

Use an immersion blender to puree the soup until smooth.

Stir in the heavy cream and season with salt and pepper.
