Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the butter, honey, and brown sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the rolled oats, corn flakes, raisins, and chopped nuts (if using).

Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
