  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the carrots into thin rounds.
  3. In a large skillet, heat the olive oil and butter over medium heat.
  4. Add the onion and garlic to the skillet and sauté until softened.
  5. Add the carrots to the skillet and cook for 5 minutes, stirring occasionally.
  6. In a separate bowl, prepare the stuffing mix according to package instructions.
  7. Grease a casserole dish and spread half of the stuffing mix on the bottom.
  8. Layer the cooked carrots on top of the stuffing.
  9. Spread the remaining stuffing mix over the carrots.
  10. Pour the vegetable broth over the casserole.
  11. Cover the dish with foil and bake for 30 minutes.
  12. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
  13. Let the casserole rest for 10 minutes before serving.
