  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Gradually add flour and mix until just combined.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. In a separate bowl, toss the sliced apples with cinnamon, brown sugar, and flour until coated. Arrange the apple slices on top of the cream cheese mixture.
  6. In a small bowl, combine brown sugar, flour, and cold butter. Use a fork or pastry cutter to cut the butter into the dry ingredients until crumbly. Sprinkle the streusel mixture over the apples.
  7. Bake for 60 minutes or until the center is set.
  8. Remove from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the springform pan and let the cheesecake cool completely.
  9. Refrigerate for at least 2 hours before serving. Enjoy!
