Blueberry Lemon Curd Shortbread Tart

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the shortbread crust ingredients and press into the bottom of a tart pan.

Bake the crust for 10 minutes, then remove from the oven and let it cool.

Spread the lemon curd evenly over the cooled crust.

Arrange the blueberries on top of the lemon curd.

In a separate bowl, whip the cream until stiff peaks form.

Dollop the whipped cream on top of the blueberries.

Sprinkle lemon zest and powdered sugar over the tart.

Chill the tart in the refrigerator for at least 1 hour before serving.

Garnish with fresh mint leaves before serving.
