Break the matzoh into small pieces and soak them in water for a few minutes. Drain and squeeze out the excess water.

In a large bowl, beat the eggs and sugar together until well combined.

Add the matzoh, apples, cinnamon, raisins, butter, vanilla extract, and salt to the bowl. Mix well.
