Almond Ricotta Bread Pudding
Bread pudding is believed to have originated in the 11th or 12th century as a way to use up stale bread.

Preheat the oven to 350°F (175°C).

Grease a baking dish.

Cut the day-old bread into cubes.

In a bowl, whisk together almond milk, ricotta cheese, eggs, sugar, vanilla extract, and almond extract.

Place the bread cubes in the greased baking dish.

Pour the almond milk mixture over the bread cubes, making sure all the bread is soaked.

Sprinkle sliced almonds on top.

Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the center is set.

Remove from the oven and let it rest for 10 minutes.

Dust with powdered sugar, if desired.
