  1. Rinse the wild rice under cold water.
  2. In a saucepan, bring vegetable broth to a boil and add the rinsed wild rice. Reduce heat, cover, and simmer for 30 minutes or until the rice is tender.
  3. In a separate skillet, heat olive oil over medium heat. Add onion, garlic, carrot, celery, and mushrooms. Sauté until vegetables are tender.
  4. Once the wild rice is cooked, drain any excess liquid and add it to the skillet with the sautéed vegetables.
  5. Stir in dried thyme, salt, and black pepper. Cook for an additional 5 minutes.
  6. Remove from heat and let the pilaf rest for 5 minutes.
  7. Garnish with fresh parsley before serving.
