Preheat the oven to 350°F (175°C) and line a cupcake tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk.

Divide the batter evenly among the cupcake liners.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

While the cupcakes are baking, dissolve the gelatin powder in boiling water.

Allow the gelatin mixture to cool slightly, then stir in the food coloring if desired.

Once the cupcakes are cooled, use a small spoon to create a small hole in the center of each cupcake.
