  3. In a separate bowl, whisk together the milk, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced peaches.
  6. Divide the batter evenly among the muffin cups.
  7. In a small bowl, mix together the cinnamon and remaining sugar.
  8. Sprinkle the cinnamon sugar mixture over the muffin batter.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
