Rinse the wheat berries and place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 40 minutes or until tender.

While the wheat berries are cooking, wash and chop the spinach leaves and spring onions.

Heat olive oil in a pan over medium heat. Add the chopped spring onions and sauté for 2 minutes.

Add the spinach to the pan and cook until wilted.

Once the wheat berries are cooked, drain any excess water and transfer them to a large bowl.

Add the sautéed spinach and spring onions to the bowl with the wheat berries.

Drizzle with lemon juice, olive oil, salt, and black pepper. Toss to combine.
