Warm Sweet Potato Salad with Chipotle-Peanut Dressing

Preheat the oven to 400°F (200°C).

Peel and cut the sweet potatoes into 1-inch cubes.

Toss the sweet potatoes with olive oil, salt, and black pepper.

Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.

While the sweet potatoes are roasting, prepare the dressing. In a blender, combine the peanuts, lime juice, olive oil, honey, chipotle pepper, and salt. Blend until smooth.

In a large bowl, combine the roasted sweet potatoes, red onion, red bell pepper, and cilantro.

Pour the chipotle-peanut dressing over the salad and toss to coat.
