  1. In a large bowl, combine the all-purpose flour, butter, and cold water. Mix until the dough comes together.
  2. Divide the dough into 6 equal portions and shape each into a ball. Flatten each ball into a disc and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a small bowl, mix together the granulated sugar, ground cinnamon, and chopped walnuts.
  5. Roll out each dough disc into a circle. Place a spoonful of the walnut mixture in the center of each circle.
  6. Fold the dough over the filling to form a half-moon shape. Press the edges together to seal.
  7. Brush the tops of the pie pockets with beaten egg.
  8. Place the pie pockets on a baking sheet and bake for 25-30 minutes, or until golden brown.
  9. Allow the pie pockets to cool for 10 minutes before serving.
