In a large bowl, combine the all-purpose flour, butter, and cold water. Mix until the dough comes together.

Divide the dough into 6 equal portions and shape each into a ball. Flatten each ball into a disc and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the granulated sugar, ground cinnamon, and chopped walnuts.

Roll out each dough disc into a circle. Place a spoonful of the walnut mixture in the center of each circle.

Fold the dough over the filling to form a half-moon shape. Press the edges together to seal.

Brush the tops of the pie pockets with beaten egg.

Place the pie pockets on a baking sheet and bake for 25-30 minutes, or until golden brown.
