Peel and slice the Walla-Walla onions.

In a large skillet, melt the butter over medium heat. Add the onions and cook until softened, about 5 minutes.

Sprinkle the flour over the onions and stir to coat. Cook for an additional 2 minutes.

Slowly pour in the milk, stirring constantly, until the mixture thickens.

Remove from heat and stir in the Gruyere cheese until melted.
