  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate microwave-safe bowl, melt the butter. Allow it to cool slightly.
  4. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes.
