Acorn squash is a winter squash variety that is rich in fiber and vitamin C.

  1. Preheat the oven to 400°F (200°C). Cut the acorn squash in half and scoop out the seeds.
  2. Brush the inside of the squash halves with olive oil and sprinkle with salt and black pepper.
  3. Place the squash halves on a baking sheet, cut side down, and roast in the preheated oven for 30-35 minutes, or until tender.
  4. While the squash is roasting, sauté the spinach in a pan with a little olive oil until wilted.
  5. Remove the squash from the oven and fill each half with sautéed spinach.
  6. Top with grated Gruyere cheese.
  7. Place the filled squash halves back in the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let rest for 5 minutes before serving.
  9. Serve hot and enjoy!
