  2. Wash and scrub the potatoes. Prick them with a fork and bake for 45-50 minutes or until tender.
  3. In the meantime, heat olive oil in a pan and sauté the onion and garlic until translucent.
  4. Add the mixed vegetables and cook for 5-7 minutes until they are tender.
  5. Once the potatoes are cool enough to handle, slice off the top and scoop out the flesh, leaving a thin shell.
  6. Mash the scooped-out potato flesh and mix it with the sautéed vegetables, salt, and black pepper.
  7. Stuff the potato shells with the vegetable mixture and sprinkle cheddar cheese on top.
  8. Place the stuffed potatoes on a baking sheet and bake for another 10 minutes, or until the cheese is melted and golden.
  9. Garnish with fresh parsley and serve hot.
