  1. In a food processor, blend chickpeas, carrots, onion, garlic, breadcrumbs, egg, salt, and pepper until well combined.
  2. Shape the mixture into patties and refrigerate for 15 minutes.
  3. Heat olive oil in a pan and cook the patties for 4-5 minutes on each side until golden brown.
  4. In a small saucepan, combine tomato ketchup, soy sauce, brown sugar, white vinegar, cornstarch, and water. Cook over medium heat until the sauce thickens.
  5. Toast the burger buns and assemble the patties with the sweet & sour sauce.
  6. Serve hot and enjoy!
