Tex-Mex Minestrone
Minestrone is a traditional Italian soup, but this Tex-Mex version adds a spicy twist with flavors inspired by Mexican cuisine.

Heat olive oil in a large pot over medium heat. Add onion, garlic, and red bell pepper. Cook until vegetables are softened, about 5 minutes.

Add diced tomatoes, vegetable broth, black beans, corn, chili powder, cumin, oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Stir in cooked pasta and cook for an additional 5 minutes.
