Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, mix the melted butter, vanilla extract, and egg.

Add the wet ingredients to the dry ingredients and mix until combined.

Fold in the crushed Oreo cookies.

Transfer the dough to the prepared baking sheet and shape it into a log, about 12 inches long and 3 inches wide.

Bake for 25-30 minutes, or until the edges are golden brown.

Remove from the oven and let it cool for 10 minutes.

Reduce the oven temperature to 325°F (160°C).

Using a serrated knife, cut the log into 1-inch thick slices.

Place the slices back on the baking sheet, cut-side down, and bake for an additional 15 minutes.

Flip the biscotti over and bake for another 15 minutes, or until crisp and golden.
